I have always enjoyed fish recipes, I look at fish as the most delicate and most natural forms of food we have to offer. When you buy fresh fish you feel inside that you have bought something that is fresh out of the sea and onto your plate. My preferred way of cooking fish is to steam it in a rich sauce, I always like how fish soaks in all those different aromas and gives you a huge lift in flavour.
To be honest I was bored of the style of fish that is cooked here in the UK, the norm is to eat it fried but I have never been to keen on this variety so I looked for a new way to cook fish and found that if you steam the fish in a sauce the quality and taste had improved. I look at fish as a precious commodity, as for years humans have over fished and left almost nothing left for future generations, so if I was to create a fish inspired recipe it would have to be something very special.
I always treat the fish I am using with the up most care and attention, as unlike meat that has a tough and sometimes brittle make-up, fish has an easily breakable and flaky consistency. I searched for a fish recipe that had to include my fruit theme, but I thought to myself that I should include elements from my past. I sat and thought that the best way to use fish was to include it within an Italian inspired recipe. To me Italian cooking is where I am inspired the most from, I love the way the Italians take such care in all aspects of cooking and also Italian food is where I began my cooking journey, so it is always in my heart whenever I cook.
The love and affection that is felt throughout Italian cooking easily rubs off on me, I see how the power of good food can really inspire others, so I knew I had to include an Italian style fish recipe. It took a while to find a recipe that fitted all the usual criteria I look for within cooking, but it was well worth that little bit of extra research, as what I found really would tell to people that if you are willing to infuse as much flavour within your dish the rewards for you is a recipe that will make not only your dinner time special but to all the people who get the chance to cook this wonderfully aromatic recipe.
The recipe in question is named “Orange and tomato cod pappardelle” an Italian recipe that consists of Cod, tomatoes, orange peel and segments, onions, olives, dill, seasoning and pasta. It is a recipe that yet again has so much goodness within, it will give to you so many different tastes and textures that at first you might not think would go so well together, but once you have taken your first bite, you will notice that each flavour complements the next.
The orange works very well with the tomato, it combines 2 different fruits together that create a unique taste within itself. The olives and cod both play big parts in adding their own infusion of taste within this recipe, as you are mixing together the saltiness of the olives, the freshness of cod as well as your fruit element, this will give to you a taste like no other. I always like the idea of adding many different aromas and textures, this gives to you a recipe that will be unlike anything else you will have experienced before.
I find it pleasing to know that I’m always willing to experiment and see what flavours work best together, but then also to push the aromas as far as I can go, in a way I am showing to others that it is possible to add fruit within your recipes, this is because not only is fruit good for you but it will change and mold into something new and unique, this is because fruit is easily changeable and adaptable for any type of meat or fish that you may be using. Much is the case within this recipe, the oranges and tomatoes works so well with cod, the tomatoes when cooked have a sweet orangey aroma that when along side the cod and olives will entice all the food lovers out there. The end results of all your hard work will be a recipe that is extremely flavoursome, appealing, and healthy but most importantly it’s a recipe that is from the earth, it is as fresh as you can get and it will bring you all the excitement and thrill we all look for when cooking for our nearest and dearest.
Ingredients (to serve 2 people):
1/2 Tbsp olive oil.
1/2 onion, thinly sliced.
1/2 cup green olives, pitted.
1 Tbsp grated orange zest.
1 medium navel oranges, peeled, segmented, membranes removed.
440gm can of diced tomatoes, undrained.
1/2 teaspoon kosher salt.
1/8 teaspoon black pepper.
2 cod fillets, cut into 2-inch pieces
1/8 cup of fresh dill, chopped.
150gms of pappardelle pasta.
Method:
1. Heat the oil in a large saucepan over medium heat. Add the onions and sauté for 5 minutes, until softened.
2. Add the olives, orange zest, orange segments, tomatoes, salt and pepper. Cover and simmer for 10 minutes.
2. Cook the pasta according to the packet instructions.
3.After the 10 mins of cooking, take the lid of the saucepan, place the fish on top of the sauce, spoon some of the sauce over the fish then cover and cook for an additional 7 minutes, until the fish is just cooked through.
4. Serve the fish and sauce on top of the pasta with a little dill on top.
